I love oven-dishes! I like to prepare all the ingredients, put them all in a baking dish, and put it in the oven to bake. In the meantime I can tidy up the kitchen and have enough time to set the table. Homely and efficient!
The rocket, tomato and chicken salad is a summery oven dish that I made a few weeks ago. It is very easy and goes well with a cold glass of white wine.
For two people you need about 350 gram of chicken breast, a few cherry tomatoes, an onion and ciabatta bread, all cut into rough chunks. Pre-heat the oven to 180°C. Marinade the chicken with olive oil, Italian herbs and garlic for about 15 minutes and put in a baking dish. Put the baking dish with the chicken on an oven tray and add the vegetables and ciabatta around it. Bake in the oven for about 30 minutes or until chicken is cooked.
When it is finished in the oven, add everything together in a big salad bowl, add the rocket and that’s it!
Enjoy with some good white wine!
