Sweet carrot cake

As a child I didn’t like carrots and still don’t really like cooked carrots. I have heard about carrot cake, but I had no idea what to think of it. A cake with carrots? That couldn’t be very tasty!

Carrot Cake with carrot shavings

Until about 2 years ago, when I had a piece of carrot cake at a friend’s house. Mmm… that is actually pretty good…  Soft, moist cake with a sweet white glaze around it. I found myself picking the carrot cake more and more when we had coffee and cake. And then it hit me, why not make my own carrot cake!

Carrot Cake Slice

It seemed quite complicated to me, but it wasn’t as difficult as I thought.

For the cake:
2 big carrots (grated)
2,5 ml ginger powder
5 ml cinnamon powder
150 g brown caster sugar
50 g white sugar
230 g self-rising flour
3 eggs
90 g walnuts
Zest of 1 orange
240 ml vegetable oil

Creamy glaze:
200 g natural cream cheese
90 g icing sugar
5 ml lemon juice

I couldn’t find natural cream cheese so I used pineapple cream cheese for the creamy layer. This was okay, but a bit too pineapplely for my liking. So my glase therefore still needs a little improvement!
